Toscana Soup
This Soup hits the spot and is a great recipe to stay low carb or keto. Omit potatoes and add some cauliflower to make this recipe amazing!

Ingredients
- 1 lbs Ground Sausage
- 4 cups Spinach
- 4 strips Bacon Cooked
- 1 Small Onion Chopped
- 1 Cauliflower Chopped
- 2 cups Heavy Whipping Cream
- 4 cups Chicken Broth
- 2 cloves Garlic Minced
- 1 tbsp Parsley optional
- 1 tbsp Oregano optional
- Salt and Pepper
Instructions
- In a soup pot on medium heat, brown ground sausage, chopped onions, and garlic.
- Once cooked, add chicken broth and heavy whipping cream and bring to a simmer.
- While still on medium heat, add cauliflower and bacon. Cook for 10-15 minutes or until cauliflower can be pierced with a fork.
- Finally, Add spinach and let it cook in soup for 5 or so minutes until wilted into soup. Finish seasoning to taste.
- Allow to cool and top with Parmesan Cheese.
Notes
This recipe is so versatile. I like to add spinach, however, you can substitute kale instead of spinach.
Add some spice to this recipe by choosing a spicy sausage versus regular ground sausage.
Toscana soup is perfect for meal prep. Make in a big batch and freeze some for later.
